Mythopia - Jadis
Get your hands on that intense nose of ripe peach, orange skin and fresh flowers, and a fresh palate with silky texture with a vibrant amber color. A Chasselas like you've never had before and clearly not your average traditional white wine. The Jadis is largely Fendant, with a touch of Reze, another local grape variety. The vines grow on stone wall terraces, and are roughly 70 years old. The soils are a combination of chalk and schist. The grapes are hand harvested, partially destemmed and spontaneously fermented in 1000 litre stainless steel tanks for a week during which time the wine undergoes pigeage. The wine is then transferred to used 400 litre oak barrels where it is aged for 2 years. The wine is bottled unfined, unfiltered, and with no added sulphur.
