Chateau Meylet Saint - Emilion Grand Cru
This Saint-Emilion Grand Cru is the only wine from Chateau Meylet’s biodynamic vineyard, planted with 80% Merlot and 20% Cabernet Franc and Sauvignon. The hand-harvested, meticulously sorted grapes are destemmed and fermented in oak vats. During fermentation, the wine undergoes a gentle pressing by foot in order to keep the cap wet; a traditional Burgundian technique less aggressive than the common pump-over technique. The wine is then aged for two years in a blend of new and old oak barrels.
