La Villana 2017 Bianco Uovo

Joy Kull tends the vines of her Azienda Agricola, La Villana, on the slopes of the crater lake Lago di Bolsena north of Rome. The authochthonous grapes Joy grows are nurtured by the volcanic soils of the crater at moderate altitude and enjoy ideal sun exposure and dry winds.

This is the first vintage in Joy’s new 700l cement egg. The egg is not lined with resin or wax and therefore allows the wine inside to breathe through the porous cement. Joy left the oldest Procanico vines to mature for a couple more weeks and then harvested the grapes. The juice fermented on the skins for four days in resin before racking the wine into the egg. The result, Uovo Bianco 2017, is Joy’s favorite wine yet. It is evident that the cement is the perfect vessel for grapes grown on these volcanic soils. The cement enhances the structure and territoriality of the wine by gradual micro-oxidation. We are excited about this wine!
