About Ramón Parera
At Celler Pardas, Ramón Parera and Jordi Anan manage Can Comas, a medieval estate in Alt Penedès surrounded by forest, crops and vineyards, mostly Xarello and Sumoll. Ramón likes to call his approach to viticulture as “non-faming”, not ploughing his clay-limestone rich soils, using ground vegetation and following biodynamic principles. Spontaneous fermentations, no clarifying or filtering, Ramón has managed to make some of the most beautiful and precise expressions of Xarello, Sumoll, and other local varieties like Malvasia de Sitges in the region, which is no easy task. Sumoll is notoriously rustic and yet their Sus Scrofa is fruity, delicate and approachable.
