Akilia - Valdesacia

This complex and beautiful white wine from Akilia (Mario Rovira) comes from the tiny Valdesacia parcel (0.5 HA), on an east-facing slope with quartz and loamy clay over slate soils. Vines are 116 years old! A blend of Palomino Fino and Doña Blanca, and with a total production of just 544 bottles, the grapes ferment and age in one single 1000L stainless steel tank. 

Aromas of honey, quince and bee pollen. On the palate it's salty and mineral, typical of Palomino fino, with preserved lemon and fennel notes.
