La Coulée d'Ambrosia
In Greek and Roman cultures ambrosia meant “food of the gods”. Winemaker Jean François Chéné does everything possible to meet these high expectations. He practices biodynamic farming and makes unfiltered wines with zero additives.
Jean-Francois started in 2005 by partially recovering the family vineyards on Beaulieu-sur-Layon, in the Loire. His aim is to respect the life of the soil in order to maintain balance in the vineyards and thus the maximum balance in his wines. His 4 HA consist of Grolleau, Cabernet Franc and Chenin mainly located on the hillsides on schist soils. The focus is on the work in the vineyard where everything is done according to biodynamic principles with respect to all the natural cycles.
He intervenes as little as possible in the winemaking process on the wines, not adding SO2 and aging the wines for long periods of time so they can find their own balance. The result are wines with deep fruit, some oxidation and beautiful minerality.
