Celler Pardas began with two growers from Penedès, Ramón Parera and Jordi Anan. They bought an old estate called Can Comas in Alt Penedès and spans 30 HA of forest and other crops, mostly cereal.
Their methods are holistic, and they manage the forest which surrounds the vineyards to create a sustainable ecosystem. They also live on the property. Their farming is certified organic and focus on the local grape varieties, Sumoll and Xarello.
Their plantings all come from cuttings of old vines from the region. Winemaking reflects their farming philosophy; they work with native yeasts and never clarify or correct their deeply soulful and spiritual wines, expressive, direct and distinctly beautiful.
